Clovers are the most popular honey plants in many states. White clover, alsike clover, and the white and yellow sweet clover plants are the most important for honey production. Depending on location and source, clover honey varies in color from water white, to extra light amber, and has a mild, delicate flavor.

Orange is a leading plant in southern Florida, Texas, Arizona, and California. All the Orange honey packed by Miller's is from California. The Orange trees bloom in March and April and produce a white to extra-light amber honey with a distinctive flavor and the aroma of orange blossoms.

Sage honey can come from different plant species. The shrubs usually grow along the California coast and in the Sierra Nevada. Sage honey is a top grade honey with a mild delicate flavor. It is generally white or water white in color. Sage honey is one of the most famous honeys in the western United States and is known never to granulate.

Western wild buckwheat grows in the desert areas of California. It produces heavy-bodied, full-flavored honey that is very popular in Europe. Buckwheat honey is popular in health food stores. Do not confuse this honey with the poor tasting domestic buckwheat honey found in other areas of the country.

Eucalyptus is one of the larger plant genera with over 500 distinct species and many hybrids. One or more species bloom in California during each month of the year but the chief honey flow is in winter and spring. Eucalyptus honey varies greatly in color and flavor, but it tends to be a strong flavored honey. Many people use this honey to treat cataracts in the family dog's eyes.

Tupelo trees have clusters of greenish flowers, which later develop into soft, berrylike fruits. In the states of southern Georgia and northwestern Florida, tupelo is the leading honey plant, producing tons of light amber honey in April and May. The honey has a mild, pleasant flavor and is known never to granulate.
Alfalfa is a legume with blue flowers. It blooms throughout the summer and is ranked as the most important honey plant in the states of Utah, Nevada, Idaho, Oregon, and most of the western states. Alfalfa honey is white or extra-light amber in color with a fine flavor. The honey also has good body, which makes it a perfect table honey.

Avocado honey is hard to find, because most beekeepers work the Orange trees, which bloom at the same time. Avocado honey is Amber in color and has an almost molasses like flavor. It is unique and delicious!

This honey is certified organic both in the U.S. and Canada. It is a very mild honey made up mostly of Clover, but also Alfalfa and some Canola blossom as well. This honey is very white in color and not as heavy bodied as most of our other honeys. For those purists who eat only Organic foods, this is the honey for you! Warning: This honey crystallizes quickly and may even arrive crystallized. It can be eaten in this form, which is quite delicious or re liquefied if you prefer. Wildflower honey is characterized by its sweetness and flavorful taste. It is typically darker than many honeys with a more robust flavor. Summer and early fall are prime production times for wildflower. Hives are placed in vast prairies and grasslands where bees have access to pure water and a wide variety of wild plants. The honey produced in these conditions is blended naturally by the bees as they visit many different nectar sources.
